I know I said I was done, but I really do want to keep trying at this point. However, my one-star rating remains.At 10:00:00, reservations were "made available" for April. None were actually available.Why do I have a hard time believing the reviews? Because I don't see any possible way to get a reservation for this restaurant. Since many of the 5-star reviews on Yelp and the restaurant site itself talks about the "intimate, personal" atomosphere and "showcasing the work of master craftspeople" like "potters, carpenters, kimono makers" and "countless other artisans" to "create a dining experience"--setting aside the very real point that none of that really has anything to do with the actual food; I've heard some good comedy routines on this exact topic--being there is obviously essential. If nobody can get there, the experience isn't just diminished, it's denied. This restaurant--which "invites you to experience Japanese cuisine"--isn't actually inviting anyone to a place people can enjoy. It seems to be banking on FOMO and showing most people what they'll never get.What about the actual food? I looked around for some reviews of that, and they talk about a "pure" or "clean" taste, and those all brought me back to a message on the restaurant's site itself: "I want the taste of our food to be the taste of a pristine ingredient that has not been interfered with." So the tuna just tastes like... tuna? The nori is nori? From what I read, yeah. There's absolutely something to be said for orchestrating simple flavor profiles into a meal, but I also read that some of these combinations weren't ideal.Seriously. Go to Denny's or Applebees if you want to spend some time eating a no-frills meal with friends. The tables might not be artisanal woodworking, the hosts are probably not wearing bespoke couture, and when they pour you a hot tea the only ceremony is the question "How is everything?", but at least you have a seat, you're with friends, and you're eating.
