Fantastic, genuine Mediterranean summer fare, which stands out miles ahead of the competing Italian restaurants in the Hamptons -- as far as its kitchen's execution, the originality and authenticity of the menu, focus on quality and locality of ingredients and the value (given the area, of course) it's by far the winner. I'm mainly writing this review because I was curious to see if the liquor license had been granted and in reading other reviews I was shocked that someone had a negative reaction to the branzino, which to me was an absolute home run and I feel like I need to go to bat for this place based on the branzino alone.
So Il Buco's MO Is its authentically rustic aesthetic and its old world, off the beaten track, no-BS, "they've-been-doin-it-this-way-for-generations" energy way thats typical of many lesser touristy Mediterranean communities but is increasingly rare there and nearly impossible to find stateside. Maybe il Buco's mistake is simply overestimating its new clientele by assuming that that they can appreciate an intentionally unfussy menu that lets its fresh and seasonal ingredients shine or that they even know how to eat a freshly caught fish. If what you want is a tuxedoed waiter who serves crusty white bread and whipped butter to you on a bleached white tablecloth and you can order off menu, this place will not do it for you. They're gonna stick to the script that made their other two joints in the city so successful.
I respect them for serving wild caught fish on the bone— I mean, a whole lobster also takes substantial effort to eat but most people wouldn't dare ask the kitchen at a nice place to dismember it for them. It's messy and laborious but for a dish intended for two I thought it was appropriately priced and hope they keep it in the menu— ive been coming back to Il Buco al mare for The whole fish all summer even without the place having their liquor license (btw when's that happening!!!) The prawns also were excellent and transported me to summers in Sicily or corsica. Skirt steak was super memorable too. Dessert menu could definitely be more developed but that's not necessarily what I know Il Buco for.
