La Vague d'Or Saint-Tropez Reviews
L'Élément Humain
As I ended up arriving at the hotel ahead of my party, I had the pleasure of wholly devoting my attention to the cuisine of Chef Arnaud Donckele. I dined on the Balade Epicurienne, with cheese service and wine pairings as well. Thierry Di Tullio directed the show and presented the narrative of each dish with great élan. Dishes enjoyed were as follows: Elegant Tomato Tart Grown under the Sun of the Hinterland * Light Puff Pastry, Marmande Marmalade * Brousse Cheese Cream with Lambrusco Vinegar Turbot with Marine Plankton Trice and Capucines * Violin and Ball Zucchinis Steamed with Seaweed, Oyster Papillote, and Clams Seared in a Pan * Haliotis and Lemon Olive Oil Broth Al Verde Roasted Poultry from our Farms, as a Sunday Memory * Small Artichokes from the Sandy Soils of Grimaud in Different Textures * Giblets Dressed Al Verde, Zitone Homage with Truffles and Foie Gras * Concentrate of a Riviera Juice Citrus Country Anthemis Winter and Seasonal Harvest * Delicate Meringue Seasoned with a Chamomile Decoction * Endocarps and Candied Peels Many of the plates on which courses were served were of an inspired design, starting with a sculpted wave and continuing with several unique pieces from Sylvie Coquet, many done in collaboration with Chef Donckele. Creative shapes, the use of stark white space with splashes of vivid azure—beautiful plates. Overall, a delightful experience. The restaurant runs on passion, high energy, and creativity. It is that human element, in all its complexity and unpredictability, that made this a unique and delightful dining experience. The July 4th fireworks were the pièce de résistance. Well done.
Fine dining at its finest at La Vague d'Or
We had never been to a Michelin rated restaurant and so did not know exactly what to expect. Perhaps we had a stereotype of what an upper tier French restaurant would be like. After extensive research we secured reservations at La Vague d'Or in St Tropez, France, one evening while our cruise ship, the Silversea Silver Ray, was in port. We contacted the restaurant in advance to let them know of a shortened dining timeline due to the impending departure of our ship. Before we even walked in the door of the restaurant, we were warmly greeted by the staff who cared for our every need while we waited for our table to be readied. Inside we were surrounded by attentive and welcoming staff who understood our time constraint and still provided us with an impeccable dining experience. Food and beverage manager M. Thierry Di Tullio greeted us warmly and with incredible hospitality and humor. I'm afraid to say we were greeted exactly the opposite of our stereotype. We, even as first-timers, could not have felt more welcomed and cared for. And that was all before the meal came. I wish I had words to describe the incredibly inventive and artistic presentations put before us, not to mention the luscious delicacies, each with its own story and accompanying sauce. Chef Arnaud Donckele and his staff certainly upheld and surpassed their reputation as one of the finest restaurants in the world.
Exquisite Meal
For my last night in St Tropez, I made reservations through the Cheval Blanc, where I was staying to make dinner reservations. Dinner service began casually outside in the patio where guests were invited to enjoy a handful of amuse bouches while sipping on cocktails and wine. At this point, the staff introduced themselves and discussed the menu for the evening. The menu is pretty much comprised of a pre fixe which starts at about 435 euros per person. You can add on a cheese selection and wine for an additional cost. 1 opted for the pre fixe menu and was invited inside to enjoy the rest of the meal in the main dining room, which was very elegant and thoughtfully appointed. Seated by the window, it was nice being able to see the flickering candles outside cast against the bright moon above. From beginning to end, the meal was impeccable. With warm friendly service, elegant environs and great company, the time passed quickly. Well worth the hefty price tag and well deserved Three Michelin Stars. Thank you for making my birthday celebration special. Merci beaucoup!!!

Amazing restaurant to try once in your life
Amazing restaurant that I personally consider one of the best in the world. Everything is perfect, from the settings, close to the sea, to the service, the food and the expensive but reasonable prices that you can expect from such a place. The wine list is stunning. You have practically two menus as an option, a short one and a long one. Both fantastic, completely created by the three Michelin Stars Chef. Each dish is sublime. We will return at the end of August as we managed to get a reservation, very difficult to get..
