I don't do omakases often but what of the reasons this one
I don't do omakases often but what of the reasons this one was so enjoyable was the excellent service. Chef Keiji is so personable. It was such an intimate experience but didn't feel stuffy which at times it can be. The dishes all stood on their own and were unique loved hearing stories about some of the ingredients from his home town. Wonderful play on flavors and textures. We had the spring menu this past Tuesday. Was enthralled with hearing the details of each dish. Appreciated simple suggestions like making sure to chew the sea cucumber slowly and experience the change in flavor. Two of our group got the sake tasting two of us got it by the glass and one had tea. Generous pours on the sake and tea was free which was refreshing to see now days. Some favorites of the evening were the Noresore (Young Sea Eel) with housemade Ponzu. And Kasugodai (Baby Seabream) with Kimizu (Egg Vinegar sauce, but powdered). Such an enjoyable evening with friends, memorable meal and experience.
Be the first to ReplyHonestly, this was probably the worst omakase experience
Honestly, this was probably the worst omakase experience I've ever had. I went a year ago, was underwhelmed, and this time was so much worse. Chef was drunk, which hey I wouldn't mind if it didn't negatively impact the dining experience. He moved incredibly slowly and the first 5 courses (mostly soup, no sushi) took an hour and a half. Insane. 3 of the 5 were not good at all. Following that, we finally got our first sushi course 1.5 hours after we sat down and it was mediocre at best. The only highlight was the o toro, which is to be expected at this price point. It was hard to watch him cut each piece in such a sloppy, uneven manner. Would not return
Be the first to ReplyThis is the "funnest" omakase in Seattle.
Chef is very personable, entertaining and honest. What they say about the sake pairing is accurate, your cup will not stay empty. Expect to stay the full 2.5 hours. It's 5 small dishes and 11 or so nigiri. What he serves is seasonal so you won't be getting salmon if it's not available. In my top 3 omakase for Seattle.
Be the first to ReplyThis was hard to write because you can't just throw out 5
This was hard to write because you can't just throw out 5 stars willie nillie, but chef Keiji really deserves it. I'm going to say this omakase was in my top 3 overall experiences up there with Sushi Kashiba & Taneda Sushi in Kaiseki yet lighter on my (boyfriend's) wallet. First, let me say this reservation took almost a year to get lol it was named "the best sushi restaurant in Seattle" in some article and HAD to check it out and it lived up to the hype. The menu as a whole isn't too crazy exciting but every single bite was culinary perfection. Now the reason I believe this omakase was memorable is due to the passion and energy Chef Keiji brings to dinner. Of all the omakases in Seattle he is definitely the most entertaining, interactive, and informative sushi chef I've had the pleasure of dining with. He even likes to challenge you by introducing one weird curveball of a dish into each rotational / seasonal menu which changes about every 3 months. Ours happened to be fish sperm sac lol Another amazing thing about LTD edition is they have a $48 sake pairing featuring 9 different sakes with unlimited pours. Once your cup starts to get low they'll come around and refill it. How generous and what a party! If you get the chance, please dine here and choose to sit at the sushi bar!
Be the first to ReplyI always wanted to try this place ever since they opened.
But I hate to say that the experience was just okay. It's not bad, but it's not great either. Price: 2/5. I'd pay $75 for this omakase. It was not worth the money. Ambience: 3/5. Modern and clean. No complaints. Service : 3/5. The server was very sweet and attentive. Food: 3/5. We wanted to love this place, but their omakase was such a an elementary level. Nothing is bad, but nothing was fantastic either. I can see that this place to be popular among people who are not very familiar with real omakase. Would we come back? No, unless our friends want to. There are so many sushi restaurants we'd go back before LTD. If you have money to spend, go to Kashiba, Taneda, Takai by Kashiba, or I love Sushi.

Yes it is incredibly difficult to get a resy here, thankfully I had a friend who is on top of it and refreshed browser fast enough to get a spot 3 months ago. Worth every penny. I've done all the omakases in Seattle and what I loved about LTD is how diverse everything was, a lot of non-fish fermented things. The table side hand roll was awesome. And loved that the chef would come out each time to our table to bring it out and talk through what we were eating. Sake pairings were very good and switched out a couple times. Don't be late to your rez, parking garage next door for reasonable price, I think $10 for a couple hours. Definitely will be back, after you know eating Trader Joe's for 2 months to afford this.

Came here for an anniversary dinner and it was the best meal me and my husband have ever eaten together. We've had quite a few omakase dinners in our lifetime and this one is by far, the most memorable. It's pretty pricey to eat at the bar, but you're really paying for the experience of being served by one of the coolest sushi chefs in the city. Chef Keiji is the sweetest and most charismatic host/sushi chef I've had the pleasure of dining with. He used to be a DJ too so the music selection definitely contributed to the vibe. He makes you feel like he's an old friend that took so much time, love, thought, and effort to make you an amazing dinner. If you're going to splurge on an omakase dinner in Seattle, this is the place to do it at.
Be the first to ReplyThe last time I've tried Ltd Edition Sushi was a bit over 2
The last time I've tried Ltd Edition Sushi was a bit over 2 years ago when they were just doing takeout omakase bento boxes when they first opened. It was still in the middle of Covid times and I believe maybe under different ownership? I remember they dry salted their fish and both my boyfriend and I were not a big fan. After they opened up to be a sit-down omakase restaurant, we started hearing a lot of good things about the omakase here. We decided to take our clients there to give it a try. We went with pretty high expectations after the raving reviews from friends and online. When we got there, the restaurant is dimly lit which gave it a nice intimate ambiance. We got seated and drinks ordered. I got the sake sampler tasting, which is a great bang for your buck. It was 9 samples of different sakes for like $48. When the first course came, it was a their version of chawanmushi I believe? I didn't get to hear what the chef was saying clearly but it was soy based and literally tasted like egg custard in soy sauce water. The second course was a white fish with a sesame sauce that completely overpowered it. As we moved on to each course, nothing really stood out to us where we understood the hype. Our clients were unimpressed too. I was also a bit surprised there was no ending to the meal with dessert. The only thing we really enjoyed was the homemade ginger they offered. It's unfortunate, but it is what it is...
Be the first to ReplySuch an awesome experience and each dishes were so
Such an awesome experience and each dishes were so thoughtful and tasty. I had omakase in Hokkaido and honestly, this place was def worth it and the uni I had was so good. I appreciated each menu description and the plates were all SO pretty. I also got the sake tasting, which is worth it. I loved my time here and would come again if I get the chance to get another reservation for a special event. Thank you so much for such a great meal.
Be the first to ReplyAmazing amazing amazing! This is my favorite omakase sushi
Amazing amazing amazing! This is my favorite omakase sushi spot in Seattle on par with Taneda in terms of value and quality. (Taneda is more elevated and different but it's also way more expensive so value is equivalent). I recently booked out the restaurant for a private event and we had an amazing time. Chef Keiji brings the vibes to the restaurant and is a great host. The fish was he always adds a few interesting weird Japanese stuff to the menu. In the past I've had monk fish liver, shirako, and this time sea snails! My favorite course at LTD remains to be the red sea urchin from Kyushu, JP. It's a pale yellow in color, more expensive, only available 2 months of year in fall, and tastes way better than Hokkaido sea urchin. LTD is the only place I've had this sea urchin! The best part about LTD is the sake pairing. It's very reasonably priced and you get 9 mid to top shelf sakes and unlimited pours. If you're at the second seating, the chef even comes and drinks with you and gives you additional sake and beer. Sit at the sushi bar for best experience. The sushi bar and tables gets you the same food but in different order. Hand roll is presented somewhere middle of the meal whereas at the sushi bar it's last. Sushi bar is more expensive but worth it for the full experience. LTD is hands down the best sushi restaurant in Seattle for omakase and sake pairing other than Taneda. I've been to them all (Kashiba, Takai, Shiro's, sushi by scratch, SAI, sushi Suzuki). The only complaint is do not ever show up starving. The chef runs late and first piece doesn't get served until 30-40 min in. You leave reasonably satisfied and very drunk with yummy sake but you will get hangry if you show up hoping to eat this as your only meal one day.

11/10, worth all my money, just take it all! When it comes to omakase, I'm all for trying whatever is in season and up to the chef and this place does it right! I came here for a friends birthday after hearing him rave about how amazing it was and it definitely lived up to the hype. We got to sit at the bar which I highly recommend for omakase because you get to see them in action and explain all of the fishes and how they make it, where it's from, etc. Every since piece I had was unique and delicious, everything melts in your mouth! Service was phenomenal and our waiter was super friendly, well educated and was very passionate about the fish. I loved the smaller restaurant feel, was great for our large group and even the artwork is beautiful. I'll be sure to come back every season to try all of the seasonal fishes. I still dream about
Be the first to ReplyThe best omakase experience in Seattle, hands down! I've
The best omakase experience in Seattle, hands down! I've been to many Michelin-starred sushi restaurants in Tokyo and Kyoto, and Ltd Edition is easily on par with those places (but without the intimidation sometimes found in Japan).Chef Jun has become a friend. We share a common interest in California Cabernets, so we always have much to discuss in that arena. The man is a true artist, and his love of his craft is obvious. The quality is crazy high, and I cannot imagine anyone leaving here hungry. Speaking for myself, I have to ask for light rice since I am easily full by the 10th course (and quite drunk when I order the sake pairing). Some might disagree, but I think that Ltd Edition represents an awesome value. The price of $120 or $140 per person (plus tax and gratuity), with this quality, quantity, and overall experience, has kept me coming back. In total, I have probably eaten here half a dozen times in the past year. I have come with family, friends, and work colleagues, and we have never had a meal that was even slightly off. This is an easy five-star review. They serve only 32 customers a day maximum, and it can be a bit tricky to get a reservation. Keep at it and your persistence will pay off!

Food was good, I just don't think anything stood out vs the other omakase spots that are in Seattle! Pictured are some of my favorite bites, but there were a few I wasn't the biggest fan of either. The ambiance is nice, but the location is right next to Cal Anderson which I wasn't a fan of. I recommend trying it out, the chef is nice and talkative, and if you order sake they are extremely generous with tastings and pours.

What can I say that hasn't been said before? Food: spectacular.Service: bopping! Kind, cheerful, never boring. Ambiance: hip! Clean! Chic! I've been here many times before, and I keep going with new friends and they've always had a great time and asking to go again. What sets Ltd. apart from other Omakase are the chefs. Chef Keiji, Chef Jun, and also hiro-san... makes this omakase establishment feel more like home. Someone you want to eat your meals with. They will share a drink with you, and openly tell you about their day, their trips, their catches of the day, and of course the bite you're about to enjoy! I'm really considering having a seasonal subscription to eat here! Ever hear the story where you could feel the emotions of the chef through the food they cook? I feel like I could do that here at Ltd. The joy and pride they take over their creations can really be savored in every bite. That and the overflowing, unlimited amount of Sake. My favorite here is their ankimo. I really hope everyone who comes here has an amazing and delicious time like I did.

Just absolutely delicious! Highly recommend making reservations as soon as they open for your selected date. Sushi bar or table seating (we did table for 2 which is less - total $319.77 with gratuity). There were 3 tables & everyone else at the Sushi Bar. The ambiance is very lively and friendly, sometimes it was hard to hear my fiancé over the music and rest of restaurant. The meal comes with 15 pieces total - 1 small squid appetizer, 1 hand roll, 12 nigiri, and a small soup to end it. Their menu is seasonal & changes every 3 months. Every bite was absolutely delicious! Hiro served us and he was wonderful! Very knowledgable & did table side service for the hand-roll and uni piece. Each bite has great flavor & wasn't bland/boring. There is also a small drink menu selection. We passed since we're not big on Sake.So far, this is my fav Omakase in Seattle. I'd put them over Shiro, Taneda, and Sushi Kashiba. Would 1000% come again.
Be the first to ReplyBest omakase I've had.
It honestly put me off sushi for awhile because the quality was so good compared to what I normally eat, I had to reset myself. We got seated on the shorter end and let us get a good view of what was being made. Every piece was good, even the types I don't typically go for were great. They had a marinated monkfish, it melted into my mouth so fast. I've never had something similar to thisThe music taste was great too, I left with a lot of new songs. We ended up talking to their sake expert a lot since she was walking around and more in the background. She helped make the whole experience better. She was very knowledgeable on what types to pair with and was just a fun person to talk to in general. The omakase is a bit pricier than I what I normally would pay, but the overall experience and quality of both food and service makes the price worth it

Best sushi I've had in a very long time; had a second serving of uni after the last nigiri course because it was so delicious; should have also asked for a second serving of monkfish. oishii!!
Be the first to ReplyLtd is always a five star experience.
I'm updating my review to add some collages of the sushi and alcohol I've had there (always get the sake pairing!). Keiji, Jun, Hiro, and the team will definitely take care of you!
Be the first to ReplyWonderful omakase counter experience.
Fantastic fish, amazing sushi rice, highly attentive chef and staff, but what I remember most (or least) about Ltd is the incredibly generous sake pairing. You get three sake glasses on a flight tray, and they bring out THREE rounds of three different types of sake. The kicker is that if you finish one glass before the next round of three comes out, and if you place your empty glass on the raised edge of the flight tray, they re-fill it with that type of sake. So basically, it was all you can drink with nine delicious sakes! Chef Keiji is friendly and funny and obviously a master with the knife. The only downside is that the music is fairly loud, so it was hard to hear him and our lovely server at times.

I've now dined here twice--once at a table, once at the bar--and can't say enough good things about the sushi, the service, or the atmosphere. I recommend the bar if you have a choice, where you can interact more and watch the prep process, but take whatever reservation you can get.
