Behind the bar entrance a windowless room with a grey stone island is surrounded by a slab of solid wood: this is the table where half a dozen of authentic Japanese food variations, though mostly from local ingredients, are served. Clearly the focus is on the high-quality ingredients and on the preparations, thoroughly and patiently explained by a waiter-maitre de salle who also pours sakes or cocktails to accompany the experience. Everything is super light and yet very tasty. A NYTimes review of the food is faithful and gives a competent list of dishes and ingredients, so no need to repeat this here. I would add even more high-quality ingredients or items to the already existing ones to give the menu additional glitter, and soften a bit the presentation, which is too hieratic for an evening out in the Big Apple. Wonder also why not many women seem to make it to the staff or the kitchen of the establishment...but I’d still come back!
