While experienced in cuisine, I am no expert in sushi. I have, however; endeavored to sample some of the best my budget can afford during my domestic travels, and Chef Sangtae Park is a gracious steward of every Michelin award his warm 6-seater "chef's choice" restaurant in Chicago's west loop has rightfully earned. I enjoyed my first properly prepared chawanmushi (a savory steamed custard), a lovely dish to warm the palate - with delightful bites of crab and topped with mushroom. Fourth course Akami (red tuna topped with negi toro) was a crowd favorite, looked like Christmas, clean flavors, like your favorite roll turned inside-out. I feel Chef's genius shines in simplicity, with the sixth course - Otoro (a piece of fatty tuna topped only in black salt) hitting every note of delight. Again on the ninth - Kanpachi (Amberjack topped with smoked salt, sesame oil, and aonori) pared down and exquisite. Followed by a show of Chef's smoked Sake (salmon) and his own special sauce (it WAS!). The Botan Ebi (sweet shrimp) topped with ebimiso had Cajun-inspired flavors, an exciting twist. By the thirteenth course I was filling and doubtful of cod (tends to be oily), but the Misoyaki was in-fucking-credible. Black cod marinated in miso overnight, grilled to flaky perfection, then served over the perfect ratio of rice to balance every savory bite - I couldn't help myself. Brilliantly followed by the most elegant Miso Soup. For the final sixteenth course, a beautiful serving of Matcha Panna Cotta (giving an Italian nod to the Japanese chawanmushi at the first) finished off the most lovely tasting menu. Money fantastically well spent, at a bargain for tasting menu prices, especially in the Windy City! I was lucky calling a day ahead and catching a seat on cancellation. Highly recommend!
