Enjoyable story-tellers' cuisine
Trained at the CIA it was after six years as the Executive Chef at Jean Georges in Manhattan that Chef Pichaya 'Pam' Soontornyanakij returned home to open POTONG, a multi-sensory showcase already capturing the attention of w50b and other culinary awards. Thai-Chinese-Australian by descent and raised in Bangkok POTONG resides inside the Chef's ancestral place of business and seeks to tell a story built upon technique, history and emotions in the style of an elegant Tasting Menu. Not necessarily easy to locate, the ancient apothecary situated amidst narrow streets, it is upon entry that guests are offered a drink in the lounge before ascending a tight elevator to the top floor meant for star-gazing plus housemade Charcuterie. Explained across 20 courses and five floors, Chef Pam's Food embracing zero-waste ethos and roots in "5 Elements," small bites arrive plated organically prior to “a tale of Palm Tree” – five “courses” plated as one with the Palm Meat Bun particularly memorable. A story-teller’s cuisine, the live Oyster presented with an augmented reality photo telling of its harvest, Shrimp Roe and Mud Crab each arrive texturally complex in unexpected ways with big flavors. Cleansing the palate with two bites of Carrot and Date, the following Fish course offered in three forms including an edible Skeleton, Potong’s pièce de résistance is a perfectly cooked Duck Breast served alongside its Brain, Heart, Eggs and Rillettes. Next delving into three distinct bites of Pomelo, progressing bitter to sweet, Soontornyanakij’s Dessert primary Dessert eats akin to Lemon Meringue Pie prior to Mignardises over dry-ice and a “Fortune Cookie” plus take-home gifts.

A hidden gem in the Chinese area. Everything from the design of he building, to the service and the food was a very pleasant experience. Especially enjoyed the duck (there signature dish). Most if not all dishes from the tasting menu were good. They had an impressive wine list.

The 20-course meal is already an incredibly wow but Potong took it to the next level by offering us an immersive and elegant dining experience. Every dish they served was meticulously crafted, showcasing a deep culinary wisdom that left a lasting impression after each bite. This dining exerience set new standard for me when it comes to Michelin-star restaurants. What struck me the most was how Potong Restaurant beautifully integrated their family's pharma legacy into the entire dining experience, it was truly inspiring. The Chef’s eye in choosing the ingredients and the fermentation process are superb. The Oyster Sarat Thani and the reincarnated noodle with caviar were personal highlights, as it brings back memories with every delicious bite. Potong have exceptional wine selection (Potong signature) among them, the red wine stood out as my favorite.

Restaurant Potong has it all- a nice story to tell, delicious and creative cuisines, World-class beverage, 5-star service, and well-thought design. There is no doubt why it has been receiving a lot of awards and recognition since it opened. Hopefully we can go back again soon and meet personally Chef Pam and her wonderful staffs. Shout out to my kababayans who also work there- Ms. Angie and Mr. Dennis. And to the passionate Mr. Sacha, Nikki and all of the staffs! ❤️❤️❤️

Restaurant POTONG is located in a narrow Soi in Yaowarat (Bangkok Chinatown). Chef Pichaya "Pam" Utharntharm ( Thank you so much for getting a table to me) stands up for a progressive Thai-Chinese cuisine. The 20 courses menu focusses on 5 senses and 5 elements which are salt, acid, spice, Maillard reaction and texture. With great proudness Chef Pam has renovated a 120 years old Chinese house being the cradle of her origin. The whole building feels great, unique and gives you the foreboding of very special dinner. I recommend to accompany your dinner with assorted Kāng Pu Chá - delicious. The whole dinner is a performance of ART, with pleasant surprises at the artistic presentation of the different compositions. I really enjoyed the evening. The gifted fortune cookie stated: "Something wonderful is about to happen to you" and the prediction got real.

When you like an exquisite dinner and like something different (high level) you have to go to the Potong!! The different courses and settings are marvellous. The you team is creating special food of local ingredients. You are experience 12-14 different courses and that is a dream!

What an amazing dining experience. Chef Pam has given it all. She had put her heart and soul to create these wonderful dishes. POTONG definitely deserves 2 Michelin Stars 🌟 🌟. Chef Pam is a real down to earth person and was great to see interacting with her diners. It was a truly incredible experience. Wine selection is great organic wines from small wineries. Highly recommended. Must dine if you visit Bangkok.
Be the first to ReplyAmazing thai-chinese food. Worthy of a star.
An enormous amount of food with a unique experience that started as soon as you walked into the restaurant. All of the dishes were expertly crafted with flavors that also remind me of childhood. Left completely stuffed and very very satisfied. The only caveats were that it is in chinatown so please plan ahead of time for dinner.....traffic is really bad that time of day. Also, the AR experience could be more well placed throughout the meal. There was only 1 AR image/experience to scan - if there were more it would have been even better (especially since you had to DL an app to experience it).

Too much fuzz, From the moment you stepped in, the entire crew compels you to look beyond and lead you on her fantasy journey whether you like it or not. You have to download a QR Code from a pamphlet to read the history of the building, the medicine, the bottles, the business, the grandparents, the 4 generations history, the menu ..on and on. Okay I got it. You are proud. The elevator arrives and you think you can finally eat. Not so fast, a scavenger hunt to run around the building to yet again learn something more. Speeches made by staff where English is not the common used language was challenging to comprehend. I couldn’t understand a word of what’s been said to me. We finally got to sit. Every spoon fed with a story. Some came with graphics, photos to lead the storyline. Now the food. I admire creativity and the art and science behind food. However, I also believe in the classics. To have food serve in an order of flavours so that …how do I put it delicately? Not taste like a hot mess of flavours. You have savoury, pastries, meat, spicy, foam, sweets, fishy food and ice cream all in the same plate. Then you get attack by this sequence of flavours again and again throughout the night. To the point where chef Pam generosity and creativity came at me like a never ending Chinese torture (no pun intended) leaving me begging for it to end. There are restaurants that serve that kind of food with all flavours on a plate and they are call buffet. I dont care for buffet.
Be the first to ReplyNice fine dining experience
The place was historic and beautifully restored. Food was very good and I thoroughly enjoyed all of the main dishes. However, I thought that there were too many dessert dishes, and the menu could do with less of it. Service was excellent, although it became quite a chore to listen to the descriptions of all 20+ courses throughout the evening. I also opted for wine pairing, which was very disappointing, and is the main reason why I am giving it 4 instead of 5 stars. Just to caveat that I understand they change their tasting menu regularly, so my experience is only for "Memories of Texture and Spices". Overall quite a nice fine dining experience.

The art of food arrangement in center heart of Yaowaraj that is so good and very very expensive……only one time for experience
Be the first to ReplyAbsolutely exceptional food, Outstanding fine-dining
My first impression was the building and art decoration. I was told from the host about the histories of the building, connecting with Chef Pam's memories. Truly inspiring and unique. The service was at pronounced level. All dishes were beautifully proportioned, superb quality of food, and stunning presented, as it represented a perfect combination of Thai-Chinese food. My favorite dishes are corn made with corn milk and brown butter with shaving of truffle serving with corn silk tea. All cooked to perfection and full of flavor The desserts was pretty amazing too. It was such a lovely gesture that really made our night. I would definitely recommend a visit
