A guest in the best restaurant in the world or simply starry sky
A very special experience awaits guests in the Schwarzwaldstube. The staff is friendly and courteous, with wit and esprit. The food is heavenly, every course is worth more than a sin! The accompanying wine completes the culinary fireworks. A coherent concept, in a pleasant environment, wellness for body and soul! Writing more would not do justice to this unique experience. All in all, the Schwarzwaldstube in the Traube Tonbach in Baiersbronn definitely met our expectations with the corresponding upper grade points of 13/15 (starting very good). This is a rating after a total of three visits, each time with the tasting menu. The first visit was with my wife without wine accompaniment. There were several courses and in the end we just thought that we had to pay a decent price for quite interesting food. We were not entirely convinced that the price-performance ratio was justified and that the definition of the three stars was met (“a unique cuisine – worth a trip!”). The price was three figures. The second visit was with two colleagues and friends with wine accompaniment. The evening went by as if there were no tomorrow and it was magical! Drinks were delicious, the food an experience! The price was four figures. The third visit was with a good old friend from my student days without wine accompaniment. It was another sobering experience with interesting food, but not worth a trip. The price was three figures. What do we make of it? I will come back and probably pay four figures rather than three. What the heck… ● First impression Ambience 4/5 (nothing to complain about) ● Staff 5/5 (the benchmark for professionalism) ● Feast for the eyes 5/5 (know how) ● Taste experience 4/5 (not yet superlative) ● Price-performance ratio 3/5 (really good, but even more expensive than that) ● Possibility of coming back 4/5 (we will) That makes 25 out of 30 points. I would recommend the restaurant and will come back.

The physical space is not consistent with 3 Michelin stars. It's a hotel room without any kind of refinement or welcoming. When we arrived at the restaurant we were informed that a film crew would be in the restaurant. I don't pay €1100, for a dinner for two people, to have film crews in the room cutting the atmosphere. The tasting menu is good, but not spectacular. The desserts are clearly poor. The price for wine pairing (€570 for a couple) is excessive. In fact, we were a little disappointed.

After many years, we are back at the Traube Tonbach. New things were created after the fire. Great atmosphere and very friendly, competent but unpretentious service. In our opinion, the kitchen has continued to improve. The large tasting menu was a dream. We could taste and enjoy every nuance. Mr. Michel, who gives the whole thing its shine, welcomes his guests and is genuinely interested in the impressions they have gained. We enjoy the high-class cuisine and are well positioned in Saarland and the surrounding area. But this service in the Schwarzwaldstube is worth every kilometer. The price-performance ratio is very good in this respect. You should definitely book the associated hotel at the same time.

Wonderful evening. The service was great as always, keep it up and the food was world class as expected, the wine selection was also great. The new room looks more magnificent in the evening thanks to the lighting and not as sober as in the pictures. My second to last visit was in the old Schwarzwaldstube, and I noticed that they had cut back on certain things and lost some of their opulence (cheese trolley, petit fours), and you were also more involved in the process by carving, filleting and flambéing at the table. If any restaurant can and should maintain these things, then it is the Schwarzwaldstube.

The evening was simply fantastic! The personal and competent service is truly outstanding. Every single course is a very special taste experience. The truly excellent wine accompaniment rounded off the evening. We were also very pleased that Mr. Michel and Mr. Gass took time for each table. We would also like to thank Mr. Finkbeiner for the friendly welcome.

A great experience. Celebrated 50 years of friendship with old friend, sadly one of the trio was admitted to the hospital the day before so could not join us. The service is excellent and meticulous as one might expect from a Michelin 3 starred restaurant but the personnel were warm, friendly and made for a pleasant experience. The food is absolutely amazing. Every course in the large Degustation menu was superb, visually and of course, with incredible quality. A real taste sensation with some of the combinations and sauces. The beverage and wine offering is vast and will please anyone. The pre menu welcome bites were a nice touch, the pralines at the end a great finale. The dress code is adapted to a more relaxed, no tie approach, but a suit would still be just as appropriate.

The Schwarzwaldstube is among the iconic restaurants of Germany and indeed Europe - no other place in D has held 3 stars for as long. The current temporary venue is pretty comfortable but we await the completion of the rebuilt restaurant (the old one burned down in Jan. 2020). The meal we had there was outstanding from the amuse bouches to the mignardises - the langoustine and lobster as starters were truly world class. My main of sea bass was very good but not at the same level as the langoustine or the lobster. We chose a la carte, and the courses/portions were surprisingly generous. We thus only ordered only 2 portions of the soufflé (for 3 persons) - that was excellent as well and at the same level as a soufflé at the Hotel de Ville as few years ago.. Service was most pleasant and unrushed, the waitress even asking for the score of the Euro 2020 which was played that evening. Stéphane Gass is a world class sommelier, and we enjoyed the 2008 Josmeyer Riesling he recommended over another Riesling from F.P. Keller....... we will mot certainly return, and sooner rather than later

We took two trains and a bus from Stuttgart and spent a night at Traube Tonbach in October 2018 just to eat at Schwarzwaldstube. It was one of the best decisions we’ve ever made.
Chef Michel is a genius and deserves high praise. While no single dish sticks out like the Lasagana at Osteria Francescana or the Caviar Eggs Benedict at Eleven Madison Park, every detail of every preparation was perfect. No needless attempts at being overly inventive - just supreme quality ingredients prepared in perfect combinations in accordance with the same local tradition that was respected by Chef Wohlfarht.
The location in the Black Forest is magical. The cheese cart is awesome. Service is extremely honest and professional. Chef walked around to greet each table towards the end of the evening - as many high-profile chefs do - but he did so in a very genuine, attentive way. Difficult to describe, but the humility of the restaurant despite its legendary status is striking.
We were fortunate to make the pilgrimage here before the fire. What a special place. We will never forget that meal.
