We had an awesome experience here! The kitchen is open and in view from the dining tables. You can see the chefs plate everything together. There is a separate hidden prep kitchen behind a door. Staff was kind, attentive (more so than standard European restaurants). Menus were available in castellano and in English. The host and waiter spoke at least a functional level of English. As a primary anglophone, even if I had not been accompanied by an hispanophone I would have felt perfectly comfortable. If you've ever seen the film, "The Menu," there is a little bit of resemblance here. A lot of work goes into preparation for every single dish, for taste, texture, aroma and visual presentation. It is very elaborate, and at times I question whether the level of work they put in contributes to the experience of a plate. This is high level artistry and I'm not a high-maintenance diner. When my husband made the restaurant reservation, he set us both down for the Javier Aranda menu option. We also took the wine pairing. My husband enjoyed the kombucha. We both loved the seasonal mushrooms temaki, purrusalda soup fritter, red chard carbonara & truffle cream, 40 day fermented Ebro's onion, Santa Pola squid & yellow aji, Ávila's suckling pig. Most of the dishes from the tasting menu were wonderful. Be prepared for lots of sweets at the end! There was a "pre-dessert" palate cleanser of beetroot and raspberry tartar with lychee sorbet. The "dessert" was a chocolate cake made with pumpkin. There was a petit four selection of confections (there were actually five of them): lychee macarons, strawberry confection like a pâte de fruit, a biscuit-like sweet, a chocolatey truffle with a biscuit center, and the fifth I can't recall.The wine pairings were also quite good, maybe slightly overwhelming because there was so much wine that I left nearly half of my glasses unfinished. We were both definitely drunk on food and wine by the end. Overall great Michelin experience, stellar visual presentation, and many courses. It is a LOT of food.

Excellent excellent excellent!The meal was divided into separate sequences: plant, sea, meat, and sweet. The meal was simply splendid.Appetizers:- the vegetable chips and tarts being served on bonsai trees was a great visual start. And the appetizer was great too with a mix of different flavors. I really enjoyed the kombucha that came, which was refreshing.Plant sequence:- this was perhaps one of the most special onions I have ever had, it had been sitting in a specially heated room for 40 days and result in a very soft and smoky flavor. Sea sequence:- the red tuna here was the stand out! The fish was so fresh and tender, which paired really well with the "pil pil" sauce.Meat sequence:- this was a flavor EXPLOSION. The egg yolk with mushroom and truffle was captivating. The suckling pig had a perfectly salted crispy skin with a fatty meat. Sweet sequence:- this was just a great finish to the dinner :) the raspberry tart and lychee sorbet was a sweet and light blend.The waiter was engaging and friendly. I had a great time!

On a trip to Madrid last month, my husband and I enjoyed an intimate evening at Gaytán. The food and service were impeccable. Watching the chefs prepare food in front of us in the massive open kitchen was the definition of dinner and a show. Who would have thought traveling across Asia, Africa, and Europe was possible in the time it takes to enjoy a romantic dinner. I especially enjoyed the chicken ravioli from Italy, a unique twist on a timeless classic. As an anniversary present to ourselves, we splurged on the additional drink pairing option, the beverages complemented each dish perfectly. Though the price of the menu may seems a little hefty, it is totally worth it for you are receiving Michelin Star cuisine accompanied by a culinary show and spectacular service. Overall dining at Gaytán was an amazing experience!

Amazing dinner - friendly staff!Yesterday we had the "small" menue (consisting of all-in 14 courses) and it was nothing short of amazing. The staff is very nice and tries to explain every dish. However, sometimes their English is a bit hard to understand. Nevertheless this truly was a 1*/2* - experience! For the price we paid, it was unbeatable!!! Again soon!

Simply wow! A new hot Michelin rated restaurant from the same chef as La Cabra. Food was beautifully and artistically presented. Taste was spot on! It was a wow dinner. Staff was very attentive and kind. They don't rush you at all. Sure each plate is small, but the food keeps coming and coming. Trust me, you will be full, and I'm not a little guy. Also, the price is decent for a tasting menu at a Michelin restaurant. Other places are many times double! Trust me, and treat yourself!

One of the best Michelin starred experiences I've had, especially for the price (comparing to NY restaurants). The full tasting was the perfect amount of food, with a great variety of textures and ingredients. The plating was art which was matched with exciting flavor combinations. The open kitchen concept was refreshing as it also limited the amount of tables and therefore, noise/chatter. Getting to see the chef at work right in front of your eyes was a treat. The staff were super friendly, despite not having the best English. But overall it was not stuffy at all, especially given that I was dressed pretty casually in jeans and sneakers.Would 100% recommend getting a table here if you're in the area!
