The freshness and quality of this restaurant is mind-blowing. The not secret because it's so in your face ingredient is love. Go to this restaurant as early and often as you can. I'll write more of a review, however the moral of the story is this place is incredible and instead of reading about it you can just look up their hours and figure out when you're going. Whatever you get will be great.We went out to celebrate and stumbled across Saffron De Twah on yelp which looked solid from the pictures. Our server, Tim, was lovely and personable. Another server also helped with bringing water, food, and checking in and was great, however, I unfortunately did not get their name to give them more direct credit and appreciation. Tim walked us through the menu, shared how everything is made from scratch, and gave some recommendations. To start, we got the loaded hummus (listed as Chef Omar's mom's favorite - it was amazing), the harissa potatoes (perfectly spicy), the beet salad (so many incredibly well balanced and fresh flavors), and chamoula (whatever your feelings are about cabbage or slaw situations, this is magic). Everything is fresh, made from scratch, and blatantly seasoned with a passionate love and appreciation for the flavor ingredients can offer. The khobz [bread] was fluffy and dreamy, and super useful for getting all of the sauces from each of the dishes.For the main course we had the lubia tagine (incredible), cauliflower batuta sandwich (perfectly fried cauliflower in a perfectly fluffy and light bread pocket, with an incredible sauce and onions), and the fried chicken sandwich (I'm vegetarian and this was one of those sandwiches that I considered taking a bite of because it looked so good. The two that did eat it said it was sweet from honey and very good).Shortly before the entrees came out we had the pleasure of a visit from Chef Omar who sat down and hung out for awhile. Chef Omar is a genuine delight and deeply committed to creating an experience and connection through phenomenal food and gathering to enjoy it (in a humble, straightforward, food is a love language and gift to others way).If the way servers/staff are treated and compensated is important to you (spoiler alert it should be), you will be thrilled to hear that folks are paid a living wage and tips are divided in an equitable way among front and back of house (i.e. servers and cooks). This is not the case in most restaurants in the US and it makes a huge difference in the quality of life, mental and emotional wellbeing of staff and that translates to your experience as a customer. If the restaurant owner's commitment to and engagement with the community is important to you (also something that will impact and improve the overall experience), your joy will continue to build in learning about the ways Chef Omar has been diligent about teaching folks how to cook and working to put together boxed meal kits (you can read about this on the back of the menu and online). If you read this far, cool. The initial point still is the main point: Go to this restaurant as early and often as you can. I'm excited for you and everyone else you share this restaurant and the experience with.
