Many things have changed. Gone with the a la carte menu and in with the fixed course menu. With the change in menu, it seemed to me that the restaurant is much quieter than before.To me the highlight of the night was the buckwheat fusilli. Something about the aroma of the cider as the plate lands in front of you just really works up your appetite. The Berkshire pork is another one that caught my attention. The slice of pork belly, soft yet crunchy at the same time. A great play on textures. I am usually not one to eat octopus, but the technique needed for the octopus appetizer must have been passed down by Ceres himself. Tender, flavorful.The insalata di carota, one of the fruits incorporated into this dish is kumquat. Something not seen too often in western cuisine. A nice contrast to everything else on the plate.Unfortunately the American wagu beef with foie gras sauce was my least favorite. Visually the presentation is not particularly appetizing. Which in itself could be forgiven. But the foie gras sauce was too salty and the overall flavor profile just seemed very one note. My date also came to the same conclusion. Service was great. Every request was promptly taken care of. Overall a good value. Even on a Centurion's salary.
