very mediocre and very expensive for a provincial brewery
Although opened by a starred chef and MOF, this brasserie is a culinary disaster. Lots of mixture on the plates. Traditional breweries have nothing to envy of this one. In addition, we ask you to eat quickly because that evening the table had to be vacated early.
Ugh! Ugh!
I am truly very disappointed with this place. A dinner that will leave me more than disappointed. A tasteless deviled egg, a decent beef chuck but nothing more. I thought that as soon as we highlighted the name of Franck Putelat in the front, it would be expressed on the plates with a more assertive requirement, it remains an ordinary brasserie, without any particular appeal. The only positive point remains the service carried out by professional staff. This place is therefore the “place to be” of Carcassonne but without any other attraction.
Nothing
Arriving at 6 p.m. for 2 coffees and a Liège coffee, we were still not served at 6:20 p.m. The waiter explains to us that they are making the whipped cream for the Liège cheese. 20 minutes for whipped cream?? The waiter thinks we've been there for 5 minutes, such little consideration is outrageous! No excuse just “we can cancel the order” He leaves to cancel in the kitchen without a glance at us. If this brasserie is called bistronomic, it has nothing of a bistro in any case 3 cafes is of no interest to them, not profitable enough. Typically the kind of business giving itself a good image without real respect for the customer. Really a waste of time
Good menu, although expensive
We ate well although the menu was expensive. Of course, this is from the perspective of the standard of living we have in Spain, compared to that of France. To the French, I'm sure the price of this menu does not seem so high. The salmon terrine, the hake with asparagus, the meat, and the desserts, all more than correct Service, somewhat slow, but friendly. Nice place.

A brasserie worthy of the name, in Carcassonne the classics of French gastronomy, souvenir dishes from the chef, revisited. Attentive and helpful staff In a word excellent 🍻☕🍷
Disappointment
For a Frank Putelat establishment, the service is very average. Prices are expensive for the quality served. Overrated reputation.
Totally overrated.
Very disapointed. Barely warm dish of the day, tasteless, bland sauce. The fish was not cooked inside at all. Decent service. Dirty water glasses, full of limescale stains. €18 for this dish of the day is frankly excessive given the mediocre quality, especially since the setting is not stunning.
Large group great food
Set menu very reasonably priced, with the set menu you get to choose one of pieces of hi normal, slightly smaller portions than the regular menu portions. If you’re looking for a large menu this is not the restaurant for you, but what they do offer is good quality food with a smaller menu typically French cuisine - not particularly vegetarian friendly. Great wines and great deserts. Friendly and helpful staff. Parking, booking recommend.
Not at the level
Really very disappointed. Supposedly a Michelin recommended restaurant but I had so little satisfaction...the house cocktail costs 14€ without any real interest. Mimosa egg...remember that the mimosa egg is not just a hard-boiled egg with mayonnaise, and too many peas without any real interest on the plate, ok for the dried bonito but hey...then we announce a veal sweetbread dauphine potatoes… Liliputian sweetbreads and everything except dauphine potatoes. A kind of tasteless apple or rösti...to finish off an unworthy Irish coffee that I didn't consume and that the waiter didn't charge for. I leave the photos. The wines were good but there is still a lack of renowned local producers on the menu who would have more of a place than a penedes...in short, no point in spending too much for such a mediocre time

Green salad thrown on the plate 4 gizzards 4 pieces of foie gras a little pâté no presentation very disappointed with the dish.

Evening with friends, our friends show us the brewery. We really enjoyed ourselves with the quiche to share, prawns scallops and 2 secretos, crepes with lollipops from the very good recommended wines, all accompanied and served by a top waiter "Jeremy". Thanks to all the teams.
Very rude waiter
Very unpleasant waiter. He came and yelled at my son who, according to him, was speaking too loudly. This very inappropriate intervention brought a bad atmosphere to our family meal.

Enjoy the hidden hand of Franck Putelat in a casual indoor outdoor setting just outside the wall of Carcassonne's Bastide de Saint Louis. A five minute walk from the center square or parking just below. We tried the risotto at least three times during a recent trip. It was really good. They have a fixed price menu for lunch with daily recommendations on the blackboard. They also stay open late, where you will be graciously received for your last stop "aperitif"
