It's a good restaurant serving food elevated well above clam shacks. When you're on vacation you might want the fried fish platter & an IPA. On those occasions you want a good cocktail, a nice meal, and a decent waiter - you have The Cut

Significant improvement. Prices are reasonable, food is excellent, service is great. So glad we gave them a second change. We had a dessert sampler and it was great. A repeat visit is in order.

Had dinner here on Saturday 12/30/23, sat at the bar with my date. When I say that this place Surprised the hell out of me I mean it. I had very low expectations because it's a steak place In the off season on Cape Cod....i couldnt have been more wrong. Both bartenders were great, knew the menu cold and made outstanding drink food and wine recommendations. We started with the crab cake which was just amazing, for dinner she had the filet mignon with a salad and I chose the steak tips with Brocolli. Wow! The meat was perfectly cooked, tender and expertly seasoned. We skipped dessert but this place is a new favorite!!!!!

All around amazing meal. Both of us ordered steak. The apps, drinks and dessert (tiramisu) were all fantastic. Chatham Cut is a great addition to the Cape food scene.

We had the duck prosciutto burrata app, it was wonderful.
The quail app was great too, but was a little sweet for me, but my husband loved it. The signature chopped salad is fabulous. Itscthec3rd time I've had it and I'll always order it. It's the most Italian salad I've had other than in Italy or my own Italian mother's cooking. Love, love it. The wild braised boar was terrific, fall of the bone, melt in your mouth and seasoned perfectly. We did ask to substitute polenta for potatoes which added another layer of fabulous. The elk loin was perfectly cooked as suggested by the chef and the fingerling potatoes and chard were perfect accompaniments. The Cut has really developed into a A plus restaurant with great ambiance. Our server, Amy, was professional and lots of fun. The restaurant has made it to our favorites list.

Will def be back. Decorated nicely. Appreciated the noise absorbing ceiling tiles. We could hear each other speaking during dinner. We each got a cocktail. Both were tasty. I got 6oz filet. It was cooked to perfection. The side were outstanding. Can't wait to have my leftovers today. Splurged on dessert. It was wonderful as well. No negatives to write about. We'll be back for sure!

Just another ordinary ho hum restaurant in a town chock full of them. The only good thing I have to say about dining in dear old Chatham is that I've never gotten food poisoning from the experience.

I had been looking forward to trying this restaurant for 2 years. Unfortunately was very disappointed for many reasons. The restaurant was packed (6:45 pm reservation on a Friday night). It was so LOUD and not in a good way. The acoustics were terrible. My husband and I could not even have a conversation without talking extremely loud so we could hear each other. Service was very slow. I know everyplace is short-handed and I always try to give the benefit of the doubt. But if you are short-staffed, limit the number of tables you seat so that you can properly handle the number there. No gluten free rolls - only regular rolls. In this day and age and restaurant of that caliber - GF rolls before dinner should be available. I ordered steak tips well done. They arrived red inside. When our waitress finally showed up to check on us I told her and she took them back to the kitchen. My husband finished his steak while I was waiting for mine to come back cooked well done. They did come back and were perfect. Both of us who try to limit sodium noticed there was A LOT of salt on the steak. The side dishes were OK, nothing special. I love the sister restaurant of the Chatham Cut called Pates. My recommendation is - choose Pate's!

We were welcomed by a friendly manager/host and seated immediately. The server was also pleasant and attentive. The restaurant had a nice soothing atmosphere and it was a quiet night. I was pleased with the peach salad and halibut special and that would have received a 4 or 5 rating. The rating of 3 is because my husband was seriously disappointed with his steak, did not think the quality of the meat was that of a steak house. He barely ate it and although the manager was circulating checking on tables, nobody was alarmed that he barely touched his meal. In their defense, he did not complain, simply packed it to go for the dogs.

Chatham is blessed with an abundance of exceptional dining and Chatham Cut ranks among the very best. They aspire to and effortlessly achieve a high level of service and a breadth of culinary achievement that eludes so many wannabes. Ownership is visibly present resulting in an operational rhythm that is effortless and efficient. The ambiance is simple, understated elegance with thoughtful lighting and quiet that elevates the overall dining experience. The Teriyaki Tips were simply the best I've ever tasted. The Lobster Ravioli was exquisite and beautifully prepared. The special cocktail, Honey Brown Old Fashion, was inventively fun, cleverly accessorized and predictably delicious. Even a menu standard option such as Caesar Salad showed their expected attention to detail Simply put, don't overlook this place if you appreciate good food and memorable dining.
Itβs Now a Five! Excellent Dinner, Service & Ambiance!
I previously reviewed Chatham Cut a year ago, and Iβm now raising my review to a β5β. Why? The Manager, Matt, really gets it, along with their F&B Manager/Bartender. A nice revamp of the nice wine list, with reasonable pricing in that it has a good selection of wines, over 75 bottles priced under $100, with a bunch in the $50-65 range; a nice selection of craft cocktails at $17, and able to a challengeβ¦.I saw they had Luxardo Bitter Bianco on their spirit list, so I asked if the bartender could make a βWhite Negroniβ (the regular red Campari one was on their craft list)β¦.voilaβ¦.a couple of minutes later, the bartender/F&B Manager appeared at our table with a perfectly executed White Negroni and said she was glad I asked! Primo! We enjoyed the βwine specialβ that evening of a Jaboulet Parallel 45 Rhone at $65. Now to the foodβ¦..some people say Chatham Cut is expensive, and it is if you have a high-end steak in mind, though the steak prices are no different than any of the fine steakhouses in Boston. $44 is certainly not an unusual price for a 6oz filet mignon. BUT, you can also eat far more reasonably once you are off the steak list as in pastas between $26 and $28, like linguini with littlenecks, white bologneseβ¦.itβs nice to see that reasonable pricing for pastas, and dishes like an excellent Caesar Salad for $16; a terrific yellowfin tuna with roasted corn, tempura shishito peppers and truffle gnocchi for $36β¦.one of the best dishes Iβve had this year anywhereβ¦. Then thereβs roast half chicken for $28, Teriyaki filet tips for $28, etc etc. In other words, you can have a great meal there without killing your credit card. And that we did. Great atmosphere with a lovely bar (you can eat there), clubby modern vibe, and great service! The manager served our wine and checked on us several times, and very amiably. A truly wonderful dinner and experience. Weβll be back there real soonβ¦β¦HIGHLY RECOMMEND!
Disappointed
We had high expectations after having been there previously but that hope was put out β¦.rolls that had been spectacular on last visit from pan davion now swapped out for kings Hawaiian rolls? Appetizer forgotten and served after all others had eaten theirs. Main course(steak) forgotten and served after all others had their meals.. Med /well requested came out rareβ¦had to send back as unable to eatβ¦ Waitress/server was very sweet and friendly but kitchen clearly needs help..
Excellent dining in an elegant and adult environment
Although the Chatham dining scene is quite crowded, this small but elegant restaurant is a welcome addition to the town, especially since you donβt have to deal with actually driving into the chaos of downtown Chatham. We asked for watermelon martinis ( not on the drink menu) and they were able to make them nevertheless. Excellent. We started with tender fried calamari with two excellent dipping sauces. The calamari could have been fried a bit more in order to get a more golden color instead of beige. Our two salads were exceptionalβ¦especially their chopped Italian salad. It was a meal in itself and was absolutely delicious. My wife got one of the specialsβ¦.lobster ravioli. It consisted of six huge ravioli that were loaded with real lobster. I got another specialβ¦.a bone in pork chop. It was thick, juicy and again, cooked to perfection with caramelized onions on top. The only disappointment was their lemon blueberry cheesecake special. It was literally the smallest piece of cheesecake that we have ever seen. A normal piece would have been four times the size of this skimpy piece. Oh well, we were full anyway. Loved the adult atmosphere and we canβt wait to go back.
A Cut Above
Ambience was great - apps - calamari well done and tasty , dinner and dessert were awesome ! But the brightest part was the server , Melissa , she was patient , knowledgeable, gracious , and kind . Teriyaki stk tips , rice and broccoli were great / petite filet albeit petite lol was spot on and cooked perfectly - loaded baked potato was HUGE - so ala Carte sides are 10$ but most can be split between two people ! Dessert was cannoli board - HOLY SH&T that was good and specialized for husbands bday ! The Cut is worth a visit - and I look forward to some dinners in the off season π
